Christmas breakfast?

    What do you do for Christmas morning breakfast? Anything special? Last year we had eggs benedict. And for the life of me I can not think of anything for this year. Rob said pancakes, but that seems so ordinary.

    I have a very easy and yummy recipe for apple fritters that I'm going to make, plus an egg casserole. I have a few different casserole recipes that I use and might use even a different one this year. A simple, small fresh fruit salad. And some sort of spiced hot apple cider and coffee.

    I also have a great recipe for gingerbread coffee but my kids weren't too fond of it, my husband doesn't drink coffee, and there are waaay too many carbs in it for me, from the molasses, so I won't be making that unless we're having company, which we're not planning on right now. I served it for company one time in the fall a couple years ago, and they loved it. I guess it just depends on individual tastes.

    We make Holiday Morning French Toast which is one of those casseroles you make the day before. So what we do is as soon as we get up, the casserole goes in the oven, the coffee gets made then we open presents. By the time we're done, the casserole is finished and we eat. I'll also usually have some muffins and crumb cake as well as fresh fruit ready to go. :)

    Holiday Morning French Toast

    1 cup brown sugar
    1/2 cup butter, melted
    3 tsp. ground cinnamon, divided
    3 tart apples, such as Granny Smith, peeled, cored and thinly sliced
    1/2 cup dried cranberries (or raisins)
    1 loaf Italian bread, cut into 1" slices
    6 large eggs
    1 1/2 cups milk
    1 Tbsp. vanilla extract

    1) Combine brown sugar, butter and 1 tsp. cinnamon in a 13X9" baking dish. Add apples and cranberries, toss to coat well. Spread apple mixture evenly over bottom of baking idsh. Arrange slices of bread on top.
    2) Mix eggs, milk, vanilla and remaining 2 tsp. cinnamon until well blended. Pour mixture over bread, soaking bread completely. Cover and refrigerate 4-24 hours.
    3) Bake, covered with aluminum foil, in a preheated 375 degree oven for 40 minutes. Uncover and bake an additional 5 minutes. Remove from oven; let stand 5 minutes. Serve warm. For an eye-catching presentation, loosen edges of baking dish and invert onto a large serving platter.

    We don't do Christmas dinner, so I do a FULL breakfast spread: Scrambled eggs, bacon, sausage, toast, biscuits, pancakes, assorted fruit, coffee, and juice. We open presents, eat, and then enjoy a "Happy Birthday Jesus" cake for dessert.

    We are thinking about going to see "Sherlock Holmes" after breakfast and presents.

    Ann, this looks absolutely wonderful! Quite different than other "night-before" French toast recipes I have seen. Now I'm thinking about making this for Christmas morning or New Year's morning and using my apple fritters for whichever other.

    We will have a huge Christmas dinner, so breakfast will be pretty light. We'll have coffee and some sort of pastry. This year, I think I'll make Cinnamon Rolls and Chocolate Rolls. Very easy--use those crescent rolls that come in a can. Spread a little butter on them, sprinkle with sugar and cinnamon, roll them up and bake. For the chocolate ones, instead of cinnamon and sugar, spread them with the Nutella spread. When they are done, drizzle them with powdered sugar icing. (Just powdered sugar and milk). They are really yummy!! And easy!!

    ANYTHING with Nutella is wonderful, Gwen! Ok, these sound wonderful too, so maybe I need to incorporate them also when I have the apple fritters? My kids LOVE Nutella! And on Christmas we eat fairly early in the morning and have dinner late, so it might work! :) Do you use butter with the nutella? Is it needed? Thanks!

    No butter needed with the nutella! It's pretty creamy, so it works without anything extra. Forgot to mention that I cut the triangles in half so the rolls aren't quite so big. They go a little farther that way, and are plenty big enough even cut in half.

    You won't believe how easy and wonderful they are! My boys absolutely inhale them LOL.

    My son was recently diagnosed with diabetes, so for Thanksgiving breakfast I made these pancakes using a recipe from a diabetic cookbook. They were absolutely delicious and his blood sugar stayed within normal range.

    I used already mixed 50/50 whole wheat/white flour (1/2 cup) and used Splenda instead of sugar. I also added some fresh blueberries and we used sugar free syrup.

    Oatmeal Pancakes

    12 Servings

    1/2 cup quick-cooking oats or old-fashioned oats

    1/4 cup all purpose flour

    1/4 cup whole wheat flour

    3/4 cup buttermilk

    1/4 cup milk

    1 tbls. sugar (or splenda)

    2 tbls. oil

    1 tsp. baking powder

    1/2 tsp. baking soda

    1/2 tsp. salt

    1 egg


    Beat ingredients with wire wisk just until smooth. For thinner pancakes, stir in additional 2 to 4 tbls. milk.

    Heat griddle to 375 degrees.

    Amy, your pancake recipe sounds really yummy! My mom is diabetic, so I'll definitely try this one.

    Oatmeal pancakes sounds nice, might do that, we thought of making waffles, so I wonder if I can use the oatmeal pancake mix in the waffle maker.

    Here's another from the same diabetic cookbook. I made these today and they are also delicious. :thumbs:
    I used splenda instead of the sugar and the half and half flour instead of just all-purpose flour. Diabetics are supposed to eat plenty of fiber, so that's why I use 1/2 whole wheat flour.

    Double Berry Muffins

    Makes 12

    1/4 cup packed brown sugar

    1/2 tsp. ground cinnamon

    1 cup milk

    1/4 cup unsweetened applesauce

    2 tbls. oil

    1/2 tsp. vanilla

    1 egg

    2 cups all-purpose flour

    1/3 cup granulated sugar

    3 tsp. baking powder

    1/2 tsp. salt

    1/2 cup fresh or frozen raspberries

    1/2 cup fresh or frozen blueberries


    Heat oven to 400 degrees. Line 12 muffin cups with paper baking cups or grease bottoms only with shortening. Mix brown sugar and cinnamon; set aside.

    Beat milk, applesauce, oil, vanilla and egg in large bowl with fork or wire whisk. Stir in flour, granulated sugar, baking powder and salt all at once just until flour is moistened (batter will be lumpy). Fold in raspberries and blueberries. Divide batter evenly among muffin cups. Sprinkle brown sugar mixture evenly over tops of muffins.

    Bake 20 to 25 minutes or until golden brown. Immediately remove from pan to wire rack.

    I can't think of a year when we didn't have oranges incorporated somehow. Usually it's miniature orange sticky rolls. Sometimes it's just a drink (orange juice mixed with sprite) and some fruit. It might be toast with orange marmalade.

    It's always something pretty light and easy to prepare. Makes life easier and Christmas more fun for everyone!

    Ok, I'm settled, waffles made with pecans, and some sugar free blueberry syrup I found last week. Robert would also like some sausages.
