Hey FoG!!! How are you all doing?? The wife? The kids??

Dinner tonight will be roast beef, baked potatoes, salad and green beans. I'm not feeling great so this is actually an easy meal not to mention the meat was on clearance today at the grocery store!

Praise God all is good!! It's been 8 months since my daughter's surgery already!! Wowza!!

Hmmm - my kids asked for French toast - I think I'll have to make it sometime!

Tonight is a new recipe called Chicken Parm-a-touille. :) Boneless chicken breasts coated in parmesan cheese then quickly sauteed - then finished in the oven, baking over the veggies that were made into ratatouille. Sounds really good!

Tonight will be chicken parmesan with spaghetti and salad. We have ballet until 6:15 and then church at 7 so we'll see how fast we can do this. LOL I'll have the chicken ready to go so hubby can put it in the oven and then do the pasta and hopefully have it ready for when I walk in the door. Last semester was nice because my 19 year old (who is a good cook) was home on Wednesday nights and was able to finish off dinner for me. Hubby has a little bit harder time because I've spoiled him and cooked for the last 22 years!! :)

I was planning to make spaghetti, but we had a plumbing problem today which required most of my afternoon's attention. My recipe usually takes about two hours, and it was getting late in the day to start it. Wifey volunteered to pick up carry-out calzones after work, so calzones it is.

    Spaghetti tomorrow.

    Sounds good FoG!!

Tonight the younger kids, hubby and I went to the yacht club for dinner (we have a minimum of $75 a month we need to spend so we used part of it for dinner tonight. I had a dish with a chicken breast stuffed with spinach and cheese with a yummy sauce on it (kind of like a hollandaise sauce), hubby had sliced london broil with mushrooms, Robby had a burger (the kid LOVES burgers) and Joanna had her penne pasta with butter and cheese. Dessert was a lemon filled cake. YUMMY!!
