    SLOW OVEN BEEF STEW

2 # stew beef, cut in 1 1/2 inch cubes
2 medium onions, cut in eighths
3 stalks celery, cut in diagonal pieces
4 medium carrots, cut in half across and lengthwise
    1 cup tomato juice
    1/3 cup quick-cooking tapioca
    1 TBLS sugar
1 TBLS salt (or to taste)
    1/4 tsp pepper
    1/2 tsp basil
2 medium potatoes, cut in 1/4 inch slices

Combine meat, onions, celery, carrots, tomato juice, tapioca, sugar, salt, pepper, and basil in a 2 1/2 quart casserole.

Cover and bake at 300 degrees for 2 1/2 hours.

Stir in potatoes, and continue baking, covered, for one hour or until meat and vegetables are done, stirring occasionally.

(Hmmm. I wonder if this would work in a crock pot)

    REESE CUP COOKIES

One roll of peanut butter cookie dough
One bag of miniature Reese Cups

In mini muffin pan, place one inch balls of dough in each muffin space. Bake according to package directions. Right after taking out of the oven, place a mini Reese cup in the cookie and press into the muffin space.

Viola'!!! These cookies are soooo good and quite addicting. And SO easy!!! Very good right out of the oven.

It was so good, and easy. We loved it. I have never been successful at making pies before. But I've been watching a lot of foodnetwork and I feel inspired to cook, and learn to cook more things, better food. My husband is loving this. I'm not a bad cook, and he liked it fine before, but now all the new stuff I've been learning he loves. And I'm tickled to death I've made 2 successful pies in the last month.

This is such a fun recipe. If you like getting creative with cooking this cake if for you its so fun!

    Dive-on-In Cake

    Prep Time: 45 min
Total Time: 3 hr 45 min
    Serves: 15

1 pkg. (2-layer size) cake mix, any flavor

    2 cups boiling water

2 pkg. (4-serving size each) JELL-O Berry Blue Flavor Gelatin

    4 cups ice cubes

Mini Oreo Bite Size Chocolate Sandwich Cookies

    Teddy Graham Snacks

    gummies

1 tub (8 oz.) Whipped Topping, thawed

    Preparation
PREPARE and bake cake mix in 13x9-in. baking pan as directed on package. Cool completely.

INVERT cake onto large platter; remove pan. Using a serrated knife, cut and scoop out a shallow rectangle from center of cake, leaving a 2-in border of cake on all sides and a thin layer of cake on the bottom. Reserve removed cake for snacking.

STIR boiling water into gelatin until completely dissolved. Add ice; stir until gelatin begins to thicken, about 6-8 min. (Spoon drawn through leaves a definite impression.) Remove any unmelted ice. Pour thickened gelatin into center of cake. Refrigerate 3 hours or until set.

FROST borders of cake with whipped topping. Decorate with cookies, graham snacks and gummies as desired to resemble a swimming pool. Store any leftover cake in refrigerator.

Insert gummy fish and octopus candies into gelatin "pool" before refrigerating for an added treat!

Have to share this one. Dh found a few years back and it has been a regular at our dinner table since. It is quick, and good.

    Cheeseburger Rice
Brown and drain 1 lb. of hamburger.
On the stove, with the hamburger, add 1 3/4 Cup water, 2/3 Cup Ketchup, 2 Tablespoons Mustard. Stir to combine, and then bring to a slight boil. Add 2 Cups Minute Rice. Stir. Remove from heat. Sprinkle 1 Cup Shredded Cheese. Cover and let it sit about 10 min.-til all water is absorbed and cheese is melted.

What I tend to do with this recipe is double it. Dh takes it to work for lunch, and it warms up in the microwave for kids' lunch.

    Hello Everyone!

Here is a little breakfast recipe my aunt just told me about last week. You will need your muffin pans for this one.

    Night Before:

Crumble and brown your favorite sausage (Jimmy Dean, etc.) Drain very well then refrigerate until the next morning. (Sausage cannot be hot!)

    Next Morning:

1 - Can Texas Style Flaky Biscuits broken in half and put in the bottom of each muffin cup (Use liners).

Stir in as many raw eggs as you want with the sausage you have chilled. (Salt and pepper eggs accordingly.)

Spoon egg/sausage mixture on top of each 1/2 biscuit in muffin cups.

Bake in the oven according to the directions for Texas Biscuits.

When finished, you will have your biscuit, eggs and sausage all in one! She said her kids loved them!

(If you have too much egg/sausage mixture you can scramble it on the stovetop while muffins are cooking.)

I have not tried it yet, so I cannot remark on how it comes out or how it taste.

I really enjoy recipe threads even though I haven't had a chance to read through them entirely. However, I have read through some of them, and you ladies have some GREAT recipes!

GloryBound, the Hawaiian Sunset Cake sounds incredible! I often take cakes to work for birthdays. I'll try this one for the next birthday!!

I love Mexican food and have a recipe for Taco Soup and a recipe for a Mexican casserole that I will share when I get a chance to post them.

    TACO SOUP

    1 lb. ground beef
    1/2 pkg. taco seasoning
    1 can ranch style beans
    1 pkg. frozen corn
    2 cans diced stewed tomatoes
    2 cans Rotel
1 pkg. dry ranch dressing packet
    2 cans water

Brown ground beef; add taco seasoning. Drain and place in crock pot or large skillet. Add remaining ingredients. Cook slowly until hot.

Serve with Fritos, cheese, or crackers.

    *******************

You can substitute chicken for the ground beef, but I never have because the ground beef is so good!!

I like really spicy Mexican food so I use ranch style beans with jalapenos, one can original Rotel and one can extra hot Rotel. (I tried using 2 cans extra hot once, but that really put it "over the top"...even for me!!)

It really makes a lot, but it freezes well!
