    Awww Granny! You have to BUY this one. There are too many FREE recipes on the 'net' for me to buy another cookbook...

    I clicked on the 2 'sample' recipes and the page would not come up for me. Anyone else try? If so, please post the recipes here if they sound good.

    I'm sorry...I scanned the page without really reading or clicking...and after I posted, went back. I couldn't get the samples to come up either...don't think I'd buy the book. Next time I'll read the site carefully before posting. "Haste makes waste". (Oh well, seemed like a good thing at first glance).

    Anyone have any 'cool' diet recipes for the hot days of summer.

    Salads seem to be the mainstay, but I get tired of them.

    I have been using my George Forman Grill and my indoor smokeless grill a lot to forgo the heat from the oven as hubby is NOT an outdoor grill person...

    Any suggestions???

    There is a chicken and rib "rub" that is carb free - you can get it at Wal-Mart. It is soooooo yummy on meat that is grilled or baked.

    Also, if you want a mousse that is awesome - mix some sugar free chocolate pudding with Carb free milk, cream cheese and some whipped cream. You can make a crust our of grated nuts, or put them on top. YUMMMM.

    Sue asked me to post this recipe. It contains flour, but you might try it with soy flour to cut carbs more. But if you aren't going to consume a lot of it carbs are going to be minimal.


    Cheese sauce

    depends on how much sauce you want, how many people will be eating the meal as to how much ingredients you'll need, you can't hardly mess it up.

    On medium low heat, Melt 3T margarine(or butter) in sauce pan, mix in 2T. flour(I use the wondra flour for thickening because it doesn't lump up) mix well. Start off with 1 cup milk and water mixed(you could use all low carb milk, or all milk, but I usually go half water half milk) pour in slowly and whisk the mixture at the same time. Add more liquid as needed, you want a nice pourable sauce. Add cheese, shredded or sliced, whatever you have, I have mixed 4 cheese at one time and it was wonderful, how much is up to you, just how cheesy do you want it to taste. Stir till melted to keep it from sticking. I added a little salt, not much and pinch of pepper, and about 1/2 t. of ground dry mustard. You can easily adjust how much sauce or how thick.

    Remember that website that offered 2 free recipe samples, but it wouldn't work? It did today.

    COUNTRY CHICKEN

    2 Tablespoons olive oil
    16 oz chicken breasts
    soy protein isolate (for breading)
    2 chopped garlic cloves
    1 cup mixed red & green pepper, cubed
    1/4 cup chopped onion
    1 cup diced canned tomatoes

    Bread chicken
    Saute in oil until done
    Remove from pan and keep warm
    Add little oil to pan
    Saute peppers, garlic, onion and mushrooms
    Season with basil, oregano, thyme, parsley, Old Bay
    Add tomatoes and liquid, breaking up tomatoes with spoon
    Pour sauce over chicken
    Serve.
    Serves 4


    AWESOME BLUEBERRY MUFFINS

    3 eggs, beaten
    1 and 1/2 sticks butter, melted and slightly cooled
    2 teaspoon vanilla
    1 cup protein powder
    1 and 1/2 teaspoon baking powder
    1/2 teaspoon salt
    1 cup water
    3/4 cup splenda
    1 cup flax seed meal
    3/4 cup blueberries
    cinnamon and
    nutmeg to taste

    Add dry ingredients one at a time and mix well.
    In another bowl, beat eggs,whisk the egg and then whisk in the water, vanilla, and melted butter. Pour mixture all at once into dry ingredients. Quickly stir to partially blend Fold in blueberries.
    Let stand for 10 minutes to thicken.
    Preheat oven to 350.
    Grease 12 muffin tins, and spoon mixture in.
    Bake about 25-30 minutes.
    Makes 12

    SUPREME LOW CARB CHICKEN SALAD

    2 whole chicken breasts (boneless)
    1 cup celery, (finely chopped)
    1½ - 2 cups mayonnaise
    2 TBLS lemon juice
    1 stalk celery
    1 small onion (quartered)
    Salt and pepper to taste

    Place chicken breasts in a saucepan and cover with water. Boil with celery stalk and onion for about 20 minutes or until chicken is done. Drain and discard celery stalk and onion.

    Chop cooked chicken in a food processor or meat grinder.

    Combine remaining ingredients with chicken in a medium-sized bowl. Season according to taste.

    Serve chilled on Romaine lettuce or as a sandwich on low carb bread.

    ***TIPS
    Add ½ cup chopped fresh herbs, such as dill, parsley, or tarragon, or a TBLS of brown mustard for some extra zip. This recipe is excellent served with fresh tomatoes.

    I make a strawberry or blueberry "fluff" that I really like. I use cream cheese, splenda, and cool whip - beat it up til its fluffy, add strawberries or blueberries, stir and refrigerate. It counts as 3 carbs per serving.

    Sue try a little curry powder in that chicken salad, curry chciken salad is really good.

    Anyone have any eggplant recipes?
    We started eating eggplant last summer when the lady at teh farmers market told me about her eggplant parmesean recipes, now we are addicted to it.

    I slice my eggplant, remove the skin, dip it in milk and egg mixed, coat it with crumbed pork rinds, and fry it in butter. I eat it as a snack or serve it as a veggie with a meal. Yummmmmmm!

    This is good also:

    Eggplant Pizza

    Slice eggplant into thin rounds. Salt and cover with a weight for ½ hour. Drain and blot. Sauté in olive oil until golden brown and crisp. Arrange circles close together on a pizza pan. Add pizza toppings and bake 10 minutes at 400-450º

    Sounds good Sue.
    Mom's recipe passed down from her mother's family(from the middle east). Slice the eggplant(I do the salt thing to get rid of some of the bitterness), cook ground beef with onion, salt, pepper, garlic, and my favorite allspice. Layer half the eggplant in a casserole put the meat on top, then the rest of the eggplant. Top it with a can of tomatoe sauce, and a can of crushed tomatoes. Then bake till the eggplant is cooked.

    WOW... Praise God that he sent you to me. I am on the South Beach Diet. And of course it is Low Carb/NO sugar diet. And you gave me alot of links that I can work around. Thank you Lord for sending me this wonderful sister in Christ.

    SPICY CHICKEN IN SAUCE

    1/3 cup ketchup
    1/4 cup applesauce
    1-1/2 tsp curry powder
    1/2 tsp salt
    dash of black pepper
    1/4 tsp dried thyme - crushed
    1/3 cup raisins
    1 med. green bell pepper - cut into thin strips
    1 med. red bell pepper - cut into thin strips
    1 med. onion - cut into eighths
    2 TBLS vegetable oil (or whichever oil you prefer)
    1 clove garlic - minced
    1 # skinless, boneless, chicken breasts - cut into 1/2 inch wide strips
    1/4 cup peanuts (optional)

    Combine first seven (7) ingredients in a bowl and set aside.

    In a large skillet, saute onion, peppers, and garlic in 1 TBLS oil until peppers are crisp/tender.

    Remove veggies from skillet and set aside.

    Saute chicken in remaining TBLS of oil until just cooked (about 2-3 minutes per side).

    Stir ketchup mixture in with the cooked chicken. Cook until sauce is bubbly.

    Add sauteed veggies and stir until they are coated with sauce. Garnish with peanuts (if desired).

    Serves four.

    TIPS:
    This dish is delicious served over rice. Add 1/4 tsp cayenne pepper for a hot and spicy kick.
