Hunting Thread Continued

    Ever had your shirt tail cut and blood smeared all over your face when you killed your first buck? I guess for some here that would be a sin.

    My dad used to raise game birds. Quail, Pheasant, etc.

    Good eating.

    I love my chickens. Not only do we not have any kind of a bug problem around here, they're as tender and as juicy a chicken as you've ever had. Don't have to worry about chemicals or hormones, either.

    Went squirrel hunting on Saturday. My friend busted one and my squirrel did a ninja matrix backflip and dodged the bullet.

    We also shot a crow. I would have shot 20 if I could to benefit the farmers in the area.

    Squirrel is a good meal.

    This recipe came from a chef that is a part of my Xbox 360 gaming community. I have used this for my jerky and it is great. Sometimes I add some chili powder and hot sauce if I want it spicey. My kids love this too.

    Yeah, I love fried squirrel (or cottontail) w/ biscuits and gravy and whatever else.

    Squirrel hunting used to be my favorite. 5-6 years ago my older brother gave me a German made .177 pellet rifle (shoots 1100 fps w/ one pump) when I visited him down in SC. I took it home and put a Bushnell 4X scope I had on it, sighted it in (literally could drive a nail with it @ 40 yds) and went squirrel hunting. It's a deadly squirrel rifle, got three, but I made a mess of cleaning them! I got hair all over the meat! Liked to never got it all off. Anyway, I think those were the last animals I've killed.

    If hunting is a sin, then I guess fishing is too. And if either of those is a sin, then you'd think that raising a whole flock of sheep to eat them would be *really* bad.

    Seriously though. I love beef, had some tonight. But nothing beats a tender piece of venison, ever. My favorite cut is the backstrap -- which would be the NY strip (aka strip loin) on a steer. Slice off a medallion about 3/8 inch thick and fry it in butter about medium, add salt and pepper, serve with roasted potatoes and sauteed onions. Wow.

    I actually prefer this cut over the tenderloin, which on a deer often has a gamier taste because it's inside the abdominal cavity, on the inside of the spine. I know a lot of people like the gamy taste though, so it's just a matter of preference.

    Here's another wonderful recipe: A whole back roast. Leave both backstraps and both tenderloins on the spine. Sever a section of the spine from just above the pelvic bone to about the third or fourth rib. Cut off the ribs but keep the strip. Season with salt, black pepper, a little cinnamon, allspice, nutmeg, and just a touch of cardamom if you have it. Then rub it all in with plenty of olive oil. Put in a pan with an inch of red wine. Roast uncovered at 375 degrees until it's about 115 at the spine (time depends on the size) adding water if necessary to keep it from going dry (probably won't need it), then throw in potatoes, carrots, and onions and roast COVERED another hour and a half. Uncover and roast another 15 minutes. Keep everything warm while you make a gravy from the juices. Carve off the meat and feast!

    "A righteous man regardeth the life of his beast, but the tender mercies of the wicked are cruel." It is a wicked thing to be cruel to a beast, but it is between him and God. I don't believe in depriving a man of liberty or property based on how he treats animals, unless they belong to another. So I don't support "cruelty to animals" laws.

    That said, I wouldn't necessarily welcome a cruel man into my home. I don't join hunters who cackle with pleasure at blasting a squirrel into a pink mist for the "fun" of it. I hunt for food, not trophies, though I wouldn't forbid a man to hunt for trophies. If you have too many puppies, put them down quickly and painlessly or find them a home -- don't dump them by the road to get run over. And spay the female ASAP. But that's just advice -- I wouldn't make it a crime.

    We were designed by God to be vegetarian, but after the flood he permitted us to eat the flesh of animals. I comply with game laws because of Romans 13, but when my neighbor hunts out of season I certainly don't report it; per 1 Peter 2:16, it's his decision before God.

    Short of totally organically raised stock, game is the healthiest meat you can eat. Plus, I get quality time with my kids when we hunt, and they learn how to handle a gun. Good times, good food, good company... that's hard to beat.
