I need a good butter/margarine substitute

    A favorite recipe for broccoli cornbread calls for a stick and a half of melted butter or margarine. Anything else I can substitute that's less fattening? This is the current recipe:

    2 boxes Jiffy cornbread mix
    4 eggs
    1 cup cottage cheese
    one onion, chopped
    10 oz. chopped broccoli, thawed and drained (I use fresh instead)
    1 and a half sticks butter or margarine

    Bake at 375 for 35-40 minutes.

    Mmmm, broccoli cornbread, sounds good.

    1 1/2 sticks butter = 12 TBSP lard, either one sounds good to me.

    I'd go half & half.... :)

    (I love cornbread, I was raised on cornbread)

    Well, the cornbread only calls for one egg and some milk so I'd be inclined to cut the butter in half and see how it tastes. From looking around online, you can use applesauce as well or if you're OK with the fat, you can use oil.

    Why are you worried about fat for with FOUR eggs and that sweet Jiffy mix?

    Go for the gusto, the taste, the flavor, 1 1/2 sticks of butter or 12 TBSP lard, it will be great cornbread.... :)
