Oh, turkey, of COURSE!!! It wouldn't be Thanksgiving without turkey. Oh, for Christmas, you have some leeway. You can fix turkey again, or have ham, or even steak and lobster. I've known some families to order pizza or have a big Mexican or Italian feast.

But Thanksgiving? Don't mess with tradition....it's turkey, all the way. And of course, dressing, mashed potatoes, sweet potatoes, corn, and that soupy green bean casserole...all topped off with pumpkin pie, of course!

    A traditionalist,

    Turkey, turkey, turkey.......

I bought a broad breasted turkey, havung, dressing, gravy, sweet potatoe casserole, green beans, cranberry sauce, deviled eggs, pie. Mashed potatoes on Friday to give the leftovers a lift.
My son would care for a holiday meal without cranberry sauce and deviled eggs, thats all there is to him, doesn't care what else there is.

Absolutely Turkey. Then potato filling (probably never had it if you're not PA Dutch), gravy, sweet potatoes, corn, applesauce, cranberry relish, string beans, oyster filling, bread, lima beans. For dessert (a few hours later) will be pumpkin pie and mince meat pie. A few more hours then cold turkey sandwiches. A few more hours then 2-3 Tums.

I tell you, duck roasted with veggies and fruit in the cavity and a little stuffing on the side is good too! ;) [IMG]

Potato filling is GREAT!!! I put it right up with the turkey as to how much I look forward to it. Best I can tell here's how it's done:

Peel and cut about 4 lbs of potatoes and boil them (same as for mashed potatoes)

Saute in butter about 3 medium onions and 10 stalks of celery.

Soak 10 slices of bread in about 2 cups of milk.

After the potatoes boil soft mix all the above together and put it on the mixer and mash just like mashed potatoes, while adding 6 eggs.

Bake in bowl at 350 degrees for ??? I guess 45 minutes or an hour, until the top forms a brown crust.

serve it just like mashed potatoes, best with turkey gravy.

We have it for Thanksgiving and Christmas. As a side dish it will serve about 10 Pennsylvania dutchmen or twenty normal people. :D :D
