    CTB, would this be true throughout Ireland, or just in Northern Ireland?

    There is a great deal of truth. On a trip to Ireland a couple of years ago, I learned much history that I was unaware of. I was shocked as to how the English treated the people of the Emerald Isle. The Irish have endured much in their history and yet remain a remarkably warm people.

    YOU DID WHAT!?!? Noooooooo, first never use good stout like Guinness for anything like cooking....any good beer for that matter & Sam Adams is good beer (not stout) .

    May I suggest you purchase a 6 pack of Yingling Porter (stout) for that. Its made in the good ole USA and it technically qualifies as a dark beer...though id be hard pressed to compare it to Guinness. FYI, Yingling makes a really good and affordable lager that I would most heartily suggest.

    Thanks for the tip! I've not had a drink for years and am SO out of the loop! :) I've seen Yingling in the grocery store (they have a large good beer section). I do use the Guinness for my Irish Beef Stew and I usually use the Sam Adams for my chili. I'm not going with wussy stuff - I want something that tastes good in my food! Hey, if I can't drink it, I can at least cook with it! LOL

    So the Yingling Porter would replace Guinness. Do you have a good substitute for the Sam Adams? Really, I don't make these things enough to worry about the price but hey, if I can save a few bucks, that would be good!

    You will have to tell me what kinda Sam Adams...ie, lager, porter, pilsner etc. To me, generic beer is sufficient for most cooking. I view what you are doing like putting a really good wine (meant tobe used for drinking) when cooking cherie is sufficiient.

    See, the rule for cooking with wine is to never use a wine you wouldn't drink. :)

    I'm using the Sam Adams Boston Lager right now.

    There is a great deal of truth in the somewhat new concept that the Irish preserved Christianity and western civilization against the onslaught of the Huns and the Germanic/Slavic tribes' destruction of the Roman Empire.

    I have read quite a bit on this and accept that there may very well be merit to this concept. I like that you chose the word 'preserved' instead of 'saved.'

    I believe there was a book a few years ago with "Saved" in the title relative to that subject. Yep, that's a bit too strong of a word regarding what they did.

    I did a paper on the topic and that book was part of my research - that is the conclusion I came to on the topic. The title of the book was fine, but for one word.

    It is pretty awesome to be able to visit the sites and see the artefacts of those days.

    I so wanted to visit the ancient site of Newgrange. I know it had nothing to do with the preservation of christian documents and such, but wanted to see a site so rich in ancient history. We did get to see Poulnobrone Dolmen in the Burren, awesome experience. We also visited Glendalough. Beautiful examples of celtic high crosses.

    Some of the key work to preserve learning was done in Glendalough, probably my favourite spot on the island. It is only about 40 minutes from home :)

    If you ever come back let me point you the best, IMNSHO, example of a high cross on the island near the village of Moone.
