Catfish and Squirrel

Two fishermen were slowly fishing a large lake. They had drifted into some trees and were casting around trying to find a fish or two.

One of them noticed a fallen log that was just out of the water. On the bank was a squirrel and it would run out a little on the log and then run back. After seeing it do this several times he motioned for his buddy to watch it too.

They were fascinated by it. The squirrel ran out a little ways then would dart back to the bank. Each time there was a slight swirl of the water under the log. The fishermen noticed that each time the squirrel would run out he would go just little farther out. Finally he ran out to the end of the log and grabbed an acorn that was sitting there.

Once he got his prize he began eating it right there out on the end of that log. All at once a huge catfish jumped out of the water and ate the squirrel.

The men were shocked. They had never seen anything like this. They began talking about it and one of them said it was strange that that acorn was out there where it was.

Just then there was another splash and that catfish had jumped up put of the water and put another acorn on the end of the log.

Thick channel cat fillets salt & peppered to taste, rolled in yellow cornmeal, and panfried in hot lard until golden brown. hmm hmm ummmm.

 

Yea, for flathead catfish and all other fish I use Weisenberger's Fish Batter Mix which is a locally milled and mixed batter of seasoned cornflour; it's an excellent and very popular mix for deep frying around here. There's just something about the taste of fresh channel cat, s & p, rolled in yellow cornmeal, panfried in lard.........memories from my childhood and my granny's fried fish.

 

heheh, IMO, the bigger the flathead the thicker the steak; a 50 lber is gourmet eating as much as a 5 lber is. They are our primary target fish-trot & limb lines.

 

What kind of fish is amberjack? We don't have them around here, or at least not by that name.

 

:smilewinkgrin: it will make you hungry, won't it. Sunday is my middle daughters' birthday (30); she wants fried catfish, homemade coleslaw, fried potatoes, and fried cornbread (she likes flathead too). She also wants me to buy her some ammo for her .38 special and us do some target shooting. :thumbsup:
