    and the OT sacrificial system was still in place, would you convert to Judaism and start sacrificing animals?

    Are you saying, if we still lived in the time of unfulfilled prophecy OR are you saying there was to be no fulfillment by a coming Christ would I convert to Judaism?

    The answer to the first would be yes.

    The answer to the second would be no as there would be no difference between that kind of Judaism and any other religion as one would be as good/bad as the other

    When the Temple was destroyed Christianity was still a Jewish sect.

    When the Temple was destroyed Jewish political power was transferred from the priests to the Pharisees/rabbis. If the sacrifices were restarted power would transfer back to the priests which is why Orthodox Jews opposed the establishment of Israel in 1947.
