have New Bible Dictionary 3rd edition
    New Bible Commentary
NT Intro/Theolgy 2 book set by Donald Guthrie
    ISBE "original" 1930 edition

Any baptist books/authors to supplement the above?
What about a good Systematic Theology?
have read Milliard Erickson, is Wayne Gruden another good one to read?

The best possible place to begin is to use CH Spurgeon's catechism.

At school we were required to read:
    Erickson- (which you’ve already mentioned)
    Grudem-“Systematic Theology”
“A Theology for the Church” ed. by Daniel Akin
“Understanding Christian Theology” gen ed. Swindoll & Zuck.

    Some good commentaries are:
Baker Exegetical Commentary on the New Testament
    The New American Commentary
    The Pillar New Testament Commentary
The New International Commentary on the New Testament

In my class on Ephesians we used:
Harold W Hoehner, “Ephesians: An Exegetical Commentary”

If your into reading about biblical demonology, a good scholarly work is: “Powers of Evil: A Biblical Study of Satan & Demons” by Sydney HT Page (professor of NT & academic dean at Edmonton Baptist Seminary)
