    As we approach the holidays ( :D ), I would like to share two of my "trusty old favorites"! I love anything with cream cheese almost as much as I love anything with blueberries!

    A friend of mine gave me this recipe many years ago and it has become an annual tradition:

    CHEESECAKE COOKIES

    2/3 C. butter (softened)
    2/3 C. light brown sugar
    2 C. flour
    1 C. chopped nuts
    2 8-oz. pkgs. cream cheese (softened)
    1/2 C. sugar
    2 eggs
    4 T. milk
    2 T. lemon juice
    1 tsp. vanilla

    Mix together butter, brown sugar, flour and nuts. Spread on cookie sheet, saving some for topping. Bake at 350º for 12-15 minutes.

    In blender, blend till smooth, cream cheese, sugar, eggs, milk, lemon juice and vanilla. Spread over cookie base and sprinkle with extra topping. Bake at 350º for 15 minutes.

    Cool; cut into squares. Keep refrigerated.

    I found this recipe in the paper years ago and I make several every year! Wrapped in plastic wrap and topped with a bow, it makes a great gift!

    CRUNCHY CHEESE BALL

    1 8-oz. pkg. cream cheese (softened)
    1/4 C. Miracle Whip
    2 C. ham, finely chopped (I use packaged ham found in the lunch meat section of the store.)
    2 T. chopped parsley
    1 tsp. minced onion
    1/4 tsp. dry mustard
    Finely chopped nuts

    Beat cream cheese and Miracle Whip until smooth. Stir in remaining ingredients. Cover; chill several hours. Form into ball; roll in nuts to coat. Wrap in plastic wrap and keep refrigerated.

    Spaghetti and Meatballs for an ARMY

    Serves 12 comfortably

    (this recipe calls for jarred sauce. I'm still perfecting my fresh recipe)

    3 Regular Sized Jars of Prego Spaghetti sauce ( up to you which kind)

    and One Family sized jar of Sauce

    5 lbs Hamburger

    1 lbs Italian Sausage (this is for the meatballs if you want some in the sauce you will need more)

    3 eggs

    2 cups of bread crumbs (although this varies depending on how much meat you use.)

    1 Large Family Sized box of Long Spaghetti noodles

    Grab a crock pot or Huge pot throw it on the stove then go to the cupboard and get a really big mixing bowl half the hamburger but half in the bowl and the other half in the pot on the stove. Next put the Italian sausage in the mixing bowl (note: If you use the links you will have to cut the edible wrapper off them.) Add the eggs and bread crumbs to the mixing bowl . You might have to use a little water but not over 1/2 a cup. Next grab a cookie sheet. (that is after you wash your hands). roll the mixture in the mixing bowl up and put it into balls on the cookie sheet. (size is to your taste.). Next you want to put that in a 350 degree oven for about an hour. While that is cooking brown your hamburger in that pot. ( if you are using a crook pot brown your hamburger in a separate stove skillet.) After the hamburger is browned Put all jars of sauce into your pot. (be careful about your crock pot on this step I have a huge one and it all won't fit. Remember to leave room for your meatballs.). Cook this at a slow simmer med-low heat. When your meatballs get done. Pull them out and put them in the sauce as well. Cook on low for 4-5 hours or longer for best results. ( you can cook at high speed but it won't taste nearly as well. Great things take time. ) About 30 min before you want to eat, Cook your noodles in a separate pot. A lot of people want to cook them in the same pot. That's ok but, I've never tried it. I've always cooked them separate. It's up to you.

    ***Substitutions*** You can use other sauce or if your good at it your own. I'll put up my fresh recipe when I have it perfected. You may add what you like to the sauce, onions, seasonings. My recipe is just a base [​IMG]

    I love spaghetti and meatballs, my husband hates spaghetti, and likes meat sauce. I ahven't used italian sauage in the meatballs before, I should try it.
    Lea, if you have recipes on your site, please post your link. How many in oyur family if your recipes feed so many?

    You've got a good start on your site. I love your graphics. I've had more then a little of that hamburger gravy, we grew up on it. Wish my husband would eat it, I love it. My aunt used to make something like it, becasue there were so amny of uus, and she added chopped potatos and a can of peas. I think I prefer it like yours. Keep us updated when you add more to your site.

    Hi Everybody! I've been very busy this Blueberry season and thought you'ld like this recipe I made up!

    1 Box either white or yellow cake mix
    2/3 to 1 cup blueberries
    1/2 to 1 cup crushed pecans
    1 tub of cool-whip

    Make cake according to directions
    sprinkle 3/4 of the blueberries over batter and sprinkle 3/4 of the pecans over the batter. Bake according to directions on cake mix.
    When cool spread cool-whip over cake. Sprinkle remaining blueberries and nuts over top.
    I cut the cake before spreading the coolwhip on.

    My grandkids do not use subtlety though. [​IMG]

    The first thing my grandkids do when they come through the door (after hugs) is, "Grandma, we're hungry!". [​IMG]

    I have made meatloaf with the hard boiled eggs before. It looks really neat sliced cause you have a slice of egg in the middle of each slice of meatloaf!

    QUICK AND EASY HAM & CHEESE QUICHE

    1 9-inch deep dish pie shell
    2 cups shredded sharp-cheddar cheese
    1 cup chopped ham
    1/4 cup yellow onion, finely chopped
    2 eggs, beaten
    1/2 cup mayonnaise
    1/2 evaporated milk

    Preheat oven to 375º.

    Toss together cheese, ham, and onion. Spoon into pie shell.

    Whisk together remaining ingredients until well blended. Pour over han and chees mixture.

    Bake 45 minutes, or until golden and knife inserted in center comes out clean.

    (Double the recipe and keep a spare quiche on hand in your freezer)

    I love the sites that have recipes with simple ingredients. I don't have a lot of 'fancy' spices etc.

    Sue, glad to hear that it was very good. I'll have to try it. It is getting kind of old making some of my meals separate than the families. I may sneak a few of these in and see what they think. Some low carb can't be bad for them either. Thanks again for the recipes!

    FYG, my husband has loved everything low carb I have fixed because all of it contains fat and is flavored well.

    I am having "Turkey Frattata" tonight. I won't post the recipe until I see if it is good or not. 2.8 grams a serving! [​IMG]

    I wasn't going to post this recipe because I thought it might be more trouble than it was worth. However....It serves four and I ate one serving, HUBBY ate TWO! (large servings too)

    TURKEY FRITTATA

    1 Tablespoon light olive oil
    1/2 onion, chopped
    1/2 green bell pepper, chopped
    1/2 cup chopped cooked cauliflower
    1 cup leftover cooked chopped or diced turkey
    6 eggs, lightly beaten
    1/2 cup heavy cream
    Salt and pepper
    2 tablespoons chopped parsley, basil or cilantro
    1/2 cup grated Monterey jack or mozzarella cheese

    Heat oil in a large non-stick skillet over medium high heat. Add onion and bell pepper and cook for 3 minutes. Stir in chopped cooked cauliflower and cook until golden brown. Add diced turkey and toss to coat.

    In a mixing bowl beat together the eggs and cream and season with salt and pepper. Pour egg mixture into skillet and stir in chopped herbs. Top with grated cheese and brown under broiler for about 2-3 minutes until the frittata puffs.

    Serves 4 –– 2.8 carbs per serving.

    **Sue's tips**
    1) I used brocolli instead of cauliflower and it worked just fine.

    2) I put mine in the microwave for 3 minutes instead of the broiler.

    3) Heavy Cream substitute (courtesy of Donna) is 3/4 cup milk
    1/3 cup butter melted and cooled
    (use in place of 1 cup Heavy Cream)

    Fried Pumpkin Blossoms

    (These can be low carb or regular - see note at bottom)

    Ingredients:
    1 Dozen Pumpkin Blossoms
    3 Beaten Eggs
    1 Dozen Saltine Crackers
    To taste Salt
    To taste Pepper
    1/2 stick Margarine

    Preparation Directions:

    **Pull stems out of center of blossoms**
    Crush crackers and place in a shallow bowl.
    Add salt and pepper to taste. Beat eggs in a second bowl.

    Dredge pumpkin blossoms gently in egg batter, then into the cracker crumbs.

    The flowers are tender, so it is better to set the blossom in the cracker bowl and pat on the crumbs. Turn over and repeat.

    Place directly into a frying pan with margarine.
    Cook until slightly brown.

    Remove from pan and place on a paper towel to drain.

    On a low carb diet? No problem! Just use crushed Pork Rinds instead of crackers...ZERO carbs!

    Better plan on making more, 1 dozen barely makes a serving! You CAN'T eat just ONE!!!!!

    (This is Abiyah's recipe)

    HOMEMADE SOBE DRINK

    This makes 2 gallons of drink and, I am sure, can
    be easily tweeked with other flavors.

    1 qt water in a rolling boil
    Remove from heat and immediately drop in 12
    plain tea bags (I use Lipton orange pekoe)
    Allow to steep for 10 minutes then remove tea bags
    Immediately stir in 2 cups of sugar and mix well.
    Add 1 pouch of Crystal Light lemonade mix
    1 package unsweetened cherry Koolade
    1 package unsweetened lime-lemon Koolade
    Stir well, then pour into a two-gallon container
    Add water to make 2 gallons and chill.

    When I found this recipe, I thought it was perfect for people who just are not sure how to tell when poultry is thoroughly cooked, but not dried out. Give this a try.

    BAKED STUFFED CHICKEN

    6-7 lb. chicken
    1 cup melted butter
    1 cup stuffing (Pepperidge Farm is good)
    1 cup uncooked popcorn (OVILLE REDENBACHER'S LOW FAT works best)
    Salt/pepper to taste

    Preheat oven to 350 degrees. Brush chicken well with melted butter, salt and pepper. Fill cavity with stuffing and popcorn.

    Place in baking pan with the neck end toward the back of the oven. Listen for the popping sounds.

    When the chicken's back-end blows the oven door open and the chicken flies across the room, it is done.
