    Pea Salad
    If your kids do NOT like cooked peas, they might go for this version.
    Ingredients:


    2 15 oz. Cans Early Green Peas, drained

    3 Hard-Boiled Eggs, chopped

    One Bunch Green Onions, sliced (optional)

    Mayonnaise

    Salt and Pepper
    In a medium sized bowl, combine peas, eggs, and onion. Add enough mayonnaise to coat and moisten. Add salt and pepper to taste. Chill


    THANKSGIVING DAY BAKED PINEAPPLE

    1 (16 oz.) can crushed pineapple, well drained
    12 graham crackers, broken into pieces
    2 eggs, well beaten
    1 c. sugar
    1 c. brown sugar
    1 stick butter, melted
    1/2 c. evaporated milk
    Line baking dish with pineapple; cover with graham crackers. Mix remaining ingredients; pour over graham crackers. Bake at 350 degrees. Yield: 6 servings.

    I've made this, it's yummy...
    Pumpkin Pie Cake

    1 - 16oz can pumpkin
    1 - 12 oz can evaporated milk
    1 - 1/2 cups granulated sugar
    3 - eggs
    1/2 tsp. salt 2 tsp. cinnamon
    1 tsp. nutmeg
    1 1/2 tsps.ginger
    1 cup pecan pieces
    2 sticks butter
    Mix pumpkin, milk, sugar, eggs, salt and spices in a bowl and pour into a 9x13 greased cake pan. Sprinkle yellow cake mix on top and pat it down. Sprinkle nuts over the top, melt butter and drizzle that over the top. Bake at 350 for 45-60 mins.

    What to do with leftover turkey.........

    Turkey Croquettes
    2 cups turkey, diced (may use chicken, ham or fish)
    1 cup croquette sauce (below)
    salt and pepper to taste
    3/4 cup bread crumbs
    1 egg, beaten
    Croquette Sauce
    3 tablespoons butter
    5 tablespoons flour, sifted
    1 cup milk
    1/4 teaspoon celery salt
    1/4 teaspoon lemon juice
    1/2 teaspoon steak sauce
    1 teaspoon grated onion
    1/4 teaspoon salt
    1/8 teaspoon pepper
    Combine diced turkey with sauce, salt and pepper. Shape into balls. Dip in crumbs, then in egg, then again in crumbs. Fry in deep fat. Pour remaining croquette sauce over balls; serve hot. Chopped pimientos, green pepper, or mushrooms may be added.
    Serves 4 to 6.
    Sauce: Melt butter; add flour. Blend thoroughly; add remaining ingredients. Cook until thickened, stirring constantly. Makes 2 1/2 cups sauce.


    Crockpot Turkey - Corn Pudding
    1 tablespoon vegetable oil
    1 onion, chopped
    1/4 cup chopped green bell pepper
    1 can (16 ounces) cream-style corn
    4 large eggs
    1/2 cup evaporated milk
    1/3 cup flour
    salt to taste
    pepper to taste
    2 cups chopped cooked turkey
    1 cup shredded Cheddar cheese
    Sauté chopped onion and green pepper in the vegetable oil just until softened. Remove from heat. Whisk together the creamed corn, eggs, evaporated milk, flour, salt and pepper. Stir in onion and chopped turkey. Pour mixture into a lightly greased crock pot (3 1/2 or 4-quart size).
    Cover and cook on high for about 3 hours or until a knife inserted comes out clean. Sprinkle top of casserole with cheese; cover and cook until cheese is melted, about 15 minutes. Serve immediately.
    Serves 4.

    Turkey & Rice Casserole
    2 cups cooked turkey, cut up
    2 cups cooked rice
    1/4 cup chopped green pepper
    1/2 cup chopped onion
    1 10oz can cream of mushroom soup
    garlic salt, to taste
    pepper, to taste
    Preheat oven to 350 degrees. Combine all ingredients in a 1-1/2 quart casserole; cover; bake 30 minutes.
    Serves 4.


    TURKEY BUFFET CASSEROLE

    4 oz. med. white noodles, (2 c.)
    1 pkg. frozen broccoli spears
    2 tbsp. butter or margarine
    2 tbsp. flour
    1 tsp. salt
    1/4 tsp. prepared mustard
    1/4 tsp. pepper
    2 c. milk
    1 c. (1/4 lb.) grated American cheese
    2 c. cut up cooked turkey
    1/3 c. slivered toasted almonds

    Preheat oven to 350 degrees. In separate sauce pans cook noodles and broccoli as labels direct just until tender. In saucepan over low heat, melt butter; stir in flour, salt, mustard, pepper and milk. Cook, stirring constantly until thickened. Remove from heat, stir in cheese until melted. Drain noodles and broccoli. Dice broccoli stems; leave flowerettes whole. Arrange noodles, broccoli stems, turkey in shallow casserole or 8 inch square baking dish; pour cheese sauce over all. Arrange broccoli flowerettes on top, pressing them lightly into sauce; sprinkle with almonds. Bake uncovered 15 minutes or until bubbling hot. Makes 4 to 6 servings.

    Not turkey, but looked good anyway.

    Ham & Egg Casserole
    1 cup chopped ham
    1 can cream of celery soup
    1 c. chopped celery
    1/2 cup minced onion
    1/2 c. mayonnaise
    1 cup frozen peas
    dash pepper
    1 teaspoon celery seed
    1 medium tomato, sliced
    3 hard cooked eggs, chopped
    1 cup crushed potato chips, bread crumbs or French fried onions for topping
    Mix ham, soup, celery, onion, mayonnaise, peas, pepper and celery seed. Spread half of the mixture in a buttered 1 1/2-quart casserole or deep-dish pie plate. Follow with a layer of sliced tomato and top that with chopped eggs. Spread the remaining ham mixture over all then sprinkle with crushed potato chips or other topping. Bake at 375° for 30 - 40 minutes. From Southern U.S. Cuisine (southernfood.about.com).

    BANANA CAKE

    For the cake:'

    2 medium ripe bananas - mashed
    1 cup flour
    3/4 cup chopped walnuts
    2/3 cup sugar
    1/4 cup cornstarch
    1/3 cup vegetable oil
    1 egg - slightly beaten
    1 TBLS orange juice
    1 tsp baking soda
    1 tsp vanilla
    1/4 tsp salt

    Preheat oven to 350º.
    Mix dry ingredients. Stir in remaining ingredients. Pour into greased and floured 8x8 baking pan. Bake for 30 minutes or until toothpick comes out clean when poked into cake's center. Set aside to cool before icing.

    For the icing:

    1/3 cup soft butter
    1-1/2 cups powdered sugar
    1 TBLS orange juice
    1 TBLS orange peel - grated

    Combine all ingredients, mix until fluffy, and spread on cake.

    CANDY COOKIES

    (Messy, but kid-friendly) :D

    2 sleeves Ritz-style crackers
    Creamy peanut butter
    1 12oz bag semi-sweet or milk chocolate chips
    2 TBLS Crisco shortening

    Spread peanut butter on 32 crackers and cover with another cracker, sandwich style.

    Melt chocolate chips separately, in the microwave on low setting, stirring at one-minute intervals, with one TBLS of shortening per bag.

    Dip the peanut butter crackers in the chocolate to coat evenly. Set aside on waxed paper until dry. Can be decorated after dry.

    I wouldn't mind making banana cake.
    The other night at women's bible study I had some cookies, we think made from chocolate cake mix, and it had chunks of chocolate on it. Anyone know how ot make those?

    SLOPPY JOES

    4 lbs hamburger
    1 medium onion - chopped
    1 oz chili powder
    4 cups ketchup
    12 oz tomato juice
    1 sleeve saltine crackers - crumbled

    Brown ground beef and onion in a large pot. Drain excess grease. Stir in remaining ingredients. Simmer until thick. If sauce is too thick, add 1/2 cup tomato juice or water.

    Makes enough to serve on 20 hamburger buns.

    ***TIP***
    This recipe is easy to double or triple for large gatherings and it freezes well.

    Tip for ribs.

    I noticed on teh other thread some of you use a crock pot because they come out tender.

    I use pork ribs and I boil mine first for maybe 10 to 15 min. Let cool, then drench them in BBQ sauce and into the oven until done. Mine are always so tender they come right off the bone.

    You can also add 1/4 cup white vinegar to the boiled water to cook them in. Makes it tender.

    I use vinegar when making my pot roasts and it is so tender.

    So I would suggest to use the vinegar when cooking beef ribs.

    With the holidays almost upon us, I thought this would be a good recipe to post.

    SOUTHERN SWEET POTATO PIE

    1 cup mashed sweet potatoes
    2 eggs - beaten
    1 2/3 cups sugar
    3/4 cup evaporated milk
    1/2 cup butter - melted
    1/4 cup light corn syrup
    3 TBLS flour
    1/4 tsp ground nutmeg
    pinch of salt
    1 9-inch unbaked pie shell

    Preheat oven to 350º.

    Mix all ingredients in a large bowl until smooth.

    Pour into pie shell and bake for 55-60 minutes or until a knife inserted in center comes out clean.

    ***TIPS***
    For a more dense pie, use 1 1/2 cups mashed sweet potatoes instead of 1 cup.

    Serve with a dollop of whipped cream and a dash of ground nutmeg.

    Cranberry Relish


    (There is a recipe on the back of the fresh cranberry package that you may like)

    Using your Food Processor to chop and blend,

    1 Package of Cranberries
    2 Oranges peeled and cut into pieces
    2 Apples peeled and cut into pieces

    Place in your food processor.

    I process the ingredients all at once, but you may have to divide according to your blender or food processor.

    Then after it is all chopped and blended, I add 3/4 to a cup of sugar, mix and chill. You can also freeze it for use latter.

    It is great with hot rolls, biscuits, etc.

    My husband puts it on his sandwiches.

    This recipe doesn't seem like it would have too many carbs in it and two pieces of Melba toast only have 7 carbs...so I can serve this to company and enjoy a little of it myself. [​IMG]

    HOLIDAY CHEESE BALL

    8 oz cheddar cheese - grated
    8 oz cream cheese - softened
    1/2 med. onion - minced
    2 TBLS dried chives or 3 TBLS fresh - chopped fine
    2 TBLS mayonnaise
    1 cup pecans - well chopped

    Mix together all ingredients (except the pecans) and form a ball.
    Roll in the pecans until evenly coated.
    Chill until serving time.
    Serve with crackers or garlic toast.

    ***TIP***
    This recipe is pretty when rolled in 1/2 cup fresh parsley mixed with the pecans.

    CHESS PIE

    1/4 pound butter
    1/2 cup brown sugar
    1 cup white sugar
    3 eggs
    1 tablespoon vinegar
    1/2 tablespoon vanilla
    1 tablespoon cornmeal

    Melt butter and sugars, add eggs and other ingredients and stir until mixed. Do not beat. Bake in unbaked pie shell for one hour at 350°.

    (This is your basic soup with a twist)!

    FALL POTATO SOUP

    10-12 new red potatoes - or 4/5 medium size
    1 carrot - grated
    1 rib celery - finely chopped
    2 TBLS oleo
    1 TBL bacon grease
    1 tsp flour
    1 14-oz can chicken broth
    1 cup milk
    Salt and pepper to taste

    Steam potatoes until very tender. Peel and cut into bite sized pieces when cool.
    Saute carrot, onion, and celery in the oleo until crisp tender.
    Stir in flour and bacon grease.
    Pour in chicken broth and milk, stir until smooth.
    Add potatoes and stir until mixture is lump-free.
    Heat until ready to boil, but not boiling.
    Serve topped with grated cheddar cheese and chopped green onion.

    ***TIP***
    For a decadent treat, top with crumbled bacon. Omit the bacon and bacon grease for a lower fat version.

    Easiest Vegatable Soup

    Brown 1 lb. of hamburger with an onion
    Drain

    Put in Stew pot, add 2 cans Corn, 2 cans sliced Carrots, 2 can Green Beans, 1 can (48 oz) V-8, stir, simmer till warm and serve with Corn bread.

    In the past I have used stew meat, cooked with an onion and a bit of Olive oil. The Olive oil helps to make the meat more tender. Drain when the meat is done, then add veggies and V-8.

    Quick and healthy dish!

    BAKED SEASONED SALMON

    1 pound fish filets or steaks - thawed
    1 TBLS cider vinegar
    1 TBLS Worcestershire sauce
    1 TBLS lemon juice
    1 tsp salt
    1 tsp prepared mustard
    1/8 tsp black pepper
    1/2 cup butter - melted

    Preheat oven to 450º. Arrange a single layer of salmon in a shallow baking dish. Combine remaining ingredients. Pour half the sauce mixture over the salmon. Bake 20 minutes, basting with remaining sauce. Sprinkle with paprika and chopped parsley if desired.
    Serves 4

    ***TIPS***
    Boiled new potatoes or rice make ideal side dishes, as well as a salad.

    I have the best recipe for a chocolate cake with icing that is dairy-free, egg-free, soy-free, and absolutely delicious! It was given to me by a friend of mine and I made it for my son's birthday. It was really good and no one ever missed the milk or eggs! I made mine with applesauce and it was soooo moist! Also, to make a 13X9 pan of this, just double everything.

    Five Minute Chocolate Cake

    1 c. sugar
    1 1/2 c. flour
    1/2 tsp. salt
    1/4 c. cocoa
    1 tsp. baking soda
    1 Tbsp. lemon juice
    1/3 c. oil*
    1 tsp. vanilla
    1 c. cold water

    Mix sugar, flour, salt, cocoa, & baking soda. Add lemon juice, oil, vanilla, and water. Mix well. Pour into a greased 8X8 in. pan. Bake at 350 for 30-35 minutes.

    *For lower fat recipe, substitute 1/2 of oil with applesauce or all of oil with applesauce.

    Icing

    1 1/2 c. powdered sugar
    1/8-1/4 c. cocoa (to your taste)
    1 tsp. vanilla
    2-4 Tbsp. water (to desired consistency)

    Mix all together with a whisk. Pour on hot cake.
    Enjoy!
