    Slow Cooker Orange Chicken
    Prep: 10min. Total: 8hours 10 minutes
    Servings: 6


    Ingredients
    8 amall boneless skinless chicken thighs [1lb]
    3 Tbsp. flour
    1/3 cup orange marmalade
    1/3 cup Barbeque Sauce
    2 Tbsp. soy sauce
    1 Tbsp. grated fresh gingerroot

    Directions
    TOSS chicken with flour in slow cooker

    STIR in all remaining ingredients;cover with lid

    COOK on LOW for 6-8 hours [or on HIGH for 3 to 4 hours.]

    Banana-Sour Cream Cake
    Prep: 20 min.; Total: 40 min. [incl. cooling]
    Servings: 16

    Ingredients
    1 pkg. [2-layer size] yellow cake mix
    3 eggs
    1 cup mashed ripe bananas [about 3 bananas]
    1 cup sour cream
    1/4 cup oil
    1pkg. 8ozs] Cream Cheese, softened
    1/2 cup [1-stick] butter, softened
    1 pkg. [16ozs] powdered sugar [about 4 cups]
    1 cup Waknut Pieces, finely chopped

    Directions
    PREHEAT oven to 350 degrees. Grease and flour 13x9-inch baking pan; set aside. Beat cake mix, eggs, bananas, sour cream and oil in Large bowl with electric mixer on Low speed just until moistened, stopping frequently to scrape bottom and side of bowl.Beat on Medium speed 2min. Pour into prepared pan.

    BAKE 35 min. or until wooden toothpick inserted in center comes out clean.Cool completely in pan on wire rack.

    BEAT cream cheese and butter in large bowl with electric mixer on Medium speed until well blended. Gradually add sugar, beating after each addition until well blended.

    REMOVE cake from pan; cut crosswise in half. Place one cake half, top-side down, on Large serving plate, spread top with frosting. Top with remaining cake half, top-side up. Frost top and sides of cake with remaining frosting. Carefully press walnuts into frosting on sides of cake. Store any leftovers in refrigerator.

    * TIP * - neatly frost this cake by freezing cake layers about 20 min. before frosting. This helps to set the crumbs on the cut edges of the cake layers so they don't pull up into the frosting. And don't worry if the frosting doesn't look perfect on the sides of the cake - the walnuts will cover any imperfections.

    Ham and Sweet Potato Salad
    Prep: 25 min.; Total: 25 min.

    Ingredients
    1 bag [5oz] baby spinach
    1 lb sweet potatoes, peeled, halved lengthwise, then cut cross-wise in 1/4-in.- thick slices
    8 oz. green beans, ends trimmed, beans cut in half [2-1/3 cups]
    2 tsp. vegetable oil
    8 oz thick-sliced Canadian bacon,stackerd and cut in strips
    1 red onion, cut in thin wedges
    1/3 cup honey-Dijon dressing


    Directions
    LINE a serving tray with spinach


    BRING 1 cup lightly salted water to a boil in a Large nonstick skillet. Add potatoes and beans, cover and cook 5 to 7 mins. just until potatoes are fork-tender [be careful not to overcook or potatoes will fall apart].Drain potatoes and beans.


    IN same skillet, heat oil over Medium heat. Add bacon and onion; saute 5 mins. or until lightly browned and onion is tender. Spoon over spinach along with the drained potatoes and beans.


    REMOVE skillet from heat; reduce heat to low. Pour dressing into skillet, return to heat and stir until hot. Spoon over salad.

Sure makes me hungry, now if I could get someone to cook all these good recipes. i enjoy reading your post you all make me laugh, you and cuz. Thanks again Mercedes

    Eclair Cale

    30 squares Graham crackers
    1½ cups milk
    1 pkg. Vanilla pudding
    1 tub Cool Whip
    1 cups of frosting

    Mix pudding and milk, stir until blended. Let set for 5 minutes, fold in Cool Whip.

    Put 10 squares of graham crackers on bottom of 8x8 baking dish.

    Pour ½ of the pudding mixture on top of crackers. Layer 10 more crackers. Pour rest of pudding mix over crackers and place remaining crackers on top.

    Freeze for at least 3 hours. Frost when ready to serve.

    (I am renaming this "Decadent Cake". It is simply sinful - but delicious!) :)

    Whole Oven-Barbecued Chicken
    Prep: 10 min.; Total: 1 hour 55 min.
    Servings: 6

    Ingredients:
    2 small lemons
    1/2 cup Barbecue Sauce [I used KC Masterpiece Original]
    1 tsp. Italian dressing
    2 cloves garlic, peeled
    1 whole chicken [3lb]
    1 pkg. [16-oz] Stuffing mix for chicken

    Directions:
    PREHEAT oven to 350 degrees. Grate 1/2 tsp. lemon peel; set aside. Cut lemons in half, squeeze juice into small bowl. Set aside lemon halves for later use. Add berbeque sauce and seasoning to the lemon juice; mix well. Place chicken in baking pan. Place 2 of the lemon halves and the garlic cloves inside the cavity of chicken.Rub skin of chicken with remaining 2 lemon halves and discard. Tie legs together with kitchen twine.

    BAKE 1 hour and 45 mins. or until chicken is cooked through [165 degrees], brushing with the barbeque sauce mixture every 5 min. during the last 20 min.of the baking time. Sprinkle with reserved lemon peel during the last 5 min.

    MEANWHILE prepare stuffing mix as directed on package.Place in
    1 1/2-qt.baking dish sprayed with cooking spray; cover. Place stuffing in oven during the last 30 min. of chicken baking time.

    REMOVE and discard lemon halves and garlic cloves from chicken cavity. Skim fat from drippings in chicken baking pan; serve drippings with chicken and stuffing.

    Roasted Red Potatoes with Bacon and Cheese
    Prep: 15 min.; Total: 1 hour 10 min.
    Servings: 8

    Ingredients
    1/2 cup Ranch dressing
    1/2 cup shredded Cheddar Cheese
    1/4 cup Real bacon bits
    2 lb. small red potatoes, quartered
    1 Tbsp. chopped fresh parsley

    Directions
    PREHEAT oven to 350 degrees.Mix dressing, cheese and bacon bits in large bowl. Add potatoes; toss lightly

    SPOON into lightly greased 13x9-inch baking dish; cover with foil

    BAKE 40 min. Remove foil; bake an additional 15 min. or until potatoes are tender. Sprinkle with parsley.

    Substitute: Use chopped fresh rosemary in place of the parsley.

    Here is an excellent recipe:

    Barbecue Chicken
    pieces of 1 chicken
    2 tbsp. shortening or oil
    1 medium onion chopped
    2 tbsp. vinegar
    1 tbsp. brown sugar
    1 cup ketchup
    1 tsp. mustard
    1/2 cup celery chopped
    1/2 cup hot water
    1 tsp. salt
    1/4 tsp. black pepper
    dash cayenne pepper
    Fry chicken and onions in shortening or oil for 5 minutes. Combine
    remaining ingredients in a bowl to make a sauce. Pour sauce over
    chicken in a dish. Bake in a 350 degree oven for 35 minutes.

    Yesterday was the first time I ever tried to write up a recipe, which was done in contribution for a fund-raising book. Since the only recipe threads are in this section, I thought I would paste it here.

    Cajun Catfish
    2 pounds catfish filets (approx.; and the sauce is better with filets than “nuggets”)
    1 6 oz. can tomato paste
    1 tablespoon + 1 teaspoon vegetable oil (more for a thinner sauce)
    ½ teaspoon thyme leaves
    ½ teaspoon parsley flakes
    ¼ teaspoon garlic salt
    ¼ teaspoon lemon pepper
    ¼ teaspoon onion salt
    A touch of cayenne pepper (optional; and no more than a touch unless you’re braver than I am)
    Grated Parmesan cheese

    Preheat oven to 350 degrees.

    Combine tomato paste with vegetable oil until well-mixed.
    Mix in thyme, parsley, salts, and peppers.
    Place catfish filets in pan with a thin layer of no-stick spray.
    Spread sauce evenly on filets.
    Top filets with grated Parmesan cheese.
    Bake filets about 25 minutes, or until cheese is melted and filet is easily forkable.

    Sweet and Sour Chicken Wings

    Sweet and Sour Chicken Wings
    10-12 chicken wings (cut off tips for soup stock)
    1 tsp. garlic salt
    1/2 cup cornstarch
    1 egg
    Dip chicken in beaten egg, then in cornstarch mix. In a frying pan,
    brown wings in oil. Cover with sauce and bake 40 minutes at 375
    degrees.

    Sauce
    1/2 cup chicken broth
    3/4 cup sugar
    1/4 cup ketchup
    1/4 cup vinegar
    1 tbsp. soy sauce
    1 tsp. accent or seasoning salt
    Combine ingredients in a bowl. Pour over sweet and sour chicken
    wings.

    I made this Food Network recipe for dinner tonight and we loved it. I did make some alterations though, so I'll list those in red.

    Turkey and Wild Mushroom Meat Loaf Patties with Pan Gravy - Rachel Ray
    Note: clean mushrooms with a damp cloth. Do not run directly under water.

    3 tablespoons extra-virgin olive oil, 2 turns of the pan for the mushrooms, 1 turn for the patties
    I used less in a non stick skillet
    8 cremini mushrooms, (baby portobellos), chopped
    8 shiitake mushrooms, chopped
    I only like button mushrooms and din't have fresh, so I used 1/2 can of well drain mushroom

    1 shallot, chopped 1/2 a small onion, cheaper
    Salt and pepper
    1 1/3 pounds ground turkey, the average weight of 1 package
    I used a 1 pound roll, and we had a little left over, so the recipe is more then we need
    3 or 4 sprigs fresh sage, leaves chopped, about 2 tablespoons used dried
    1 tablespoon Worcestershire sauce, eyeball it didn't have any keep forgetting to buy it
    1/2 cup Italian bread crumbs
    1 egg, beaten
    2 tablespoons butter
    2 tablespoons all-purpose flour
    2 cups chicken stock
    1 teaspoon poultry seasoning

    Heat a nonstick skillet over medium high heat. Add oil, 2 turns of the pan. Add chopped mushrooms and shallots and season with salt and pepper. Saute mushrooms 5 or 6 minutes until dark and tender. Remove from heat. Transfer mushrooms to a bowl and return pan to stove top to preheat to cook patties.
    Add turkey to the mushroom mixture. Make a well in the center of the meat. Add sage, Worcestershire sauce, bread crumbs and beaten egg and season with salt and pepper. Mix turkey meat loaf and make a small 1-inch patty. Place meat in the hot pan and cook 1 minute on each side. Taste the mini patty to help you adjust seasonings. Divide meat loaf mixture into 4 equal parts by scoring the meat before you form patties. Form 4 equal oval patties 1 inch thick. Add 1 tablespoon extra-virgin olive oil, 1 turn of the pan, and arrange patties in the skillet. Cook 6 minutes on each side and transfer to a serving plate or individual dinner plates. Return pan to heat and add butter. When butter melts, whisk in flour and cook 1 to 2 minutes. Whisk in stock and season gravy with poultry seasoning, salt and pepper, to taste. Simmer gravy until it reaches desired thickness, and pour over patties, reserving a little to pass at the table.

    I am posting the regular recipe, but I am also posting (in red) the changes I made in the ingredients to make the recipe diabetic and heart/healthy.

    5 Minute Chocolate Mug Cake

    INGREDIENTS:

    4 TBLS cake flour (not self-rising) (whole wheat flour)
    4 TBLS sugar (Splenda)
    2 TBLS baking cocoa (unsweetened cocoa)
    1 egg (egg beaters)
    3 TBLS milk (skim milk)
    3 TBLS oil (Canola oil)
    3 TBLS chocolate chips (optional) (did not use)

    1 small splash vanilla
    1 coffee mug

    DIRECTIONS:

    Put dry ingredients in mug and mix well.
    Add egg and mix thoroughly.
    Pour in milk and oil and mix well.
    Microwave for 3 minutes (or 2½ minutes depending on mug size) on HIGH.

    The cake will rise over the top of the mug, but don't be alarmed!

    Allow to cool a little and tip out onto a plate if desired.
    (I tipped mine into a bowl and topped it with sugar-free ice cream.)

    Eat and enjoy!

    I just made me one up for my afternoon snack. I took a picture of the mug (it never goes over the top). I should have wiped the excess away. The mug was clean. Honest. LOL

    Ingredients

    1 lb. extra lean ground beef
    1 jar (14 oz) spaghetti sauce, divided
    1 1/2 cups Minute White Rice, uncooked
    6 oz. Valveeta Pasturized Prepared Cheese Procuct, cut up


    Directions

    PREHEAT oven to 350 degrees. Combine meat and 1/2 cup of the spaghetti sauce; spread evenly into greased deep 9-in pie plate.


    MIX remaining sauce with rice; spoon over meat. Sprinkle with Valveeta; cover with foil.


    BAKE 25 min. Remove foil. Continue baking, uncovered, 15 min. Let stand 10 min. Carefully drain off any fat, then cut into 6 wedges to serve.

    Prep: 5 min.; Total: 40 min.

    Ingredients
    1 jar [26 oz] spaghetti sauce
    6 Tbsp. Grated Parmesan Cheese, divided
    6 small boneless skinless chicken breast halves [1 1/2 lb]
    1 1/2 cups Shredded Mozzarella Cheese

    Directions
    PREHEAT oven to 375 degrees. Pour sauce into 13x9-in baking dish. Carefully stir in 4 Tbsp. [1/4 cup] of the parmesan Cheese.Add chicken; turn over to evenly coat both sides with sauce. Cover with foil.

    BAKE 30 min. Uncover.

    TOP with Mozzarella cheese and remaining 2 Tbsp. Parmesan Cheese; continue baking 5 min. or until chicken is cooked through and cheese is melted. Serve over hot cooked pasta, if desired.

    * TIP * If you're using larger chicken breasts, cut in half lengthwise.

    Prep: 15 min; Total: 1 hr. 15 min [incl. refrigeration]
    Servings: 16

    Ingredients
    2 pkg. [4-serving size each] Pistachio Instant Pudding & Pie Filling
    2 cans [20-oz each] crushed pineapple in juice, undrained
    2 cups Miniature marshmallows
    1 cup chopped pecans
    3 cups [8-oz tub] Whipped Topping

    Directions
    MIX dry pudding mix, pineapple, marshmallows and pecans in large bowl until well blended. Gently stir in whipped topping; cover.

    REFRIGERATE 1 hr or until ready to serve. garnish with additional whipped topping and chopped pecans, if desired.
