Egg Salad sandwich

    When I am on a "bachelor weekend" (When Mrs. Salty is out of town) I like to have an egg salad sandwich. I will scramble 2 or 3 eggs then mix them with some mayo. I usually put a piece of cheese and even sometimes a slice of sandwich meat in as well.

    Am I a maverick on this or am I one of the guys?

    Any other suggestions?

    We make egg salad with hard boiled eggs.

    Now, is there a problem with egg salad? Should you not be eating egg salad?? Are you supposed be low cholesterol or something?

    I like to know that my husband can take care of himself while I'm away. I'm heading out in March on the ladies' retreat and I even plan to leave a day early to stare at the wallpaper in the hotel room. LOL - My goal is to be bored. I'm never bored but always doing TONS of stuff with tons of noise and being pulled in all directions. So I'm going early to sit and stare and BE STILL.

    I'll leave some food for him and the kids but I think he can handle 3 dinners by himself. He usually takes the littles out one night while the girls work and then he'll do something easy for the other two nights. He'll do fine.

    I've never heard of egg salad made with scrambled eggs, only boiled. I have heard of fried egg sandwiches, though.

    On the rare occasion I get to go somewhere by myself, I've learned not to cook lots of food beforehand. Hubby takes a blissful vacation from my healthy cooking and hangs out at the local burger joints eating pizza and grease and cholesterol until I get home and ask why the organic carrots in the fridge have not been touched.

    Nobody ever sees them. I can't imagine why. Especially when they can spy a hidden cookie buried under bags of salad and broccoli.

    I also make egg salad with hard-boiled eggs. I also make fried egg sandwiches. I break the yolk right after I break the egg in the skillet. After I flip it I'll lay some lunch meat and a piece of cheese on it until the cheese starts to melt. I usually toast the bread just a little to keep it from getting soggy.

    I learned to cook from my mother and her mother. I've always enjoyed it. For several years I made all of the bread that we ate.

    As for other suggestions, I also make omelets or I make scrambled eggs with Tabasco Sauce, mushrooms, a little shredded meat, shredded cheese. It's great on cold mornings or evenings. I can make cornbread, biscuits, and pancakes from scratch along with a lot of other things.

    Men should learn to cook, and parents should make sure that ALL their children can feed themselves, not just the girls. This is about personal independence, being able to take care of yourself.

    • Ramen noodles
    • Hot dogs
    • Walmart fried chicken
    • Grits

    I love egg sandwiches and I make a variety of them depending what is available (in the fridge). But IMO to be considered egg salad it needs to be made with hard boiled eggs. Once you fry them in a pan, it then becomes a fried egg sandwich. Anyone ever tried a fried egg sandwich with pork roll and cheese? Hmmm good.

    I like eggs very much but have to be careful of the cholesterol. My favorite sandwich is ham and cheese with jalapeno peppers. I toast the bread, spread on Miracle Whip, put on the cheese and a thick layer of jalapeno peppers while the ham is cooking in a skillet, add the ham and ENJOY!

    Yeah, I know--still a lot of fat. If I'm going to die from too much blood fat, I might as well die happy. :tongue3:

    We are all so different :) Hot bacon white sliced bread with brown HP sauce. Does it for me. :)

    Donna, you don't know what you have been missing:) Go easy on the mayo though and don't forget the freshly ground black pepper.

    A New Yorker who likes/has heard of grits? Who would have thunk it? :D Being a Southerner I was raised on grits. Sometime try cracking an egg into hot grits right off the stove... add in some salt and pepper and away you go. My dad liked them with just some back pepper.

    I could live off of your menu, but not while on my diet.

    Have you tried EggBeaters? They cost a little more than regular eggs, but they have very little cholesterol. They are also less fattening than regular eggs.

    I love grits and a lightly fried (a little butter, no grease) egg.

    I never eat a plain egg. Pepper is a must. I like to add diced onion and green pepper when available, maybe mushrooms. I like topping my scrambled eggs with salsa, too. in the end I couldn't tell them from the real ones. :D

    I like eggs with mushrooms, and maybe some salsa, I totally love eggs.

    I don't cook much, but my bride is one of the best cooks in our church. :love2: When I do cook, it's only for myself because I'm the only one who I would let eat my own cooking. :laugh:

    My fried egg sandwich is on buttered toast with cheese, sausage and ham if it's available. :thumbs:

    Does anyone ever crack a hole in the shell and suck the raw egg? I did this when I had my own chickens and collected eggs. No accessories need apply!

    I am only allowed eggs three times each week, and usually have them poached on brown toast...no accessories.
