THE DIET THREAD #02

    Well, I dont get as many cacrbs as Thankful and Donna, but I can vouch for the decreased tastiness of the foods I used to eat. I tasted a real Coke today and wanted to spew it out. It was syrupy! I dont miss the potatoes and pasta - well, OK the pasta maybe - but its so worth it to finally be shopping in the "regular" sections for clothes. I feel sooooo much better. When my eating is under control, I feel like my whole life is more under control. Even spiritually. Over-eating has been my downfall for so many years. I feel as if I have been freed.

    "Freed" is exactly how I'd describe it too. And we are a better witness for the Lord when we're in control of our bodies. It's easier to talk to the folks about Him & be believable. Before, when I'd put on those extra 150#, people must've laughed & doubted anything I had to say. What a farce I was. I love food, but I love God more.

    Today i'm 187 between 203 and 165
    (16 down and 22 to go).
    I got insulted those three times
    i got aprehended leaving Wal-Mart,
    aprehended for suspicion of concealing
    a Wal-Mart's Basketball under my shirt.
    So i had to do something.

    I like cauliflower instead of macaroni.
    Especially i like cauliflower & cheese
    with those ready-to-open cans of
    tomato chunks & spices. Just unfreeze
    some cauliflower & cheese, pour in
    the tomato chunks & spices, heat, and eat.

    And Sue will be happy: DDP only for soda drinks.

    HI All, There was a news report coming on last night about nighttime binging and I fell asleep and didn't get to see it. I KNOW that's what I do! I eat very tiny amounts all day but then while watching t.v. or on the computer at night, I eat and snack til bedtime! I think it's boredom... especially since I'm alone at night now after Nick goes to bed.

    I'm not losing ANY weight because I haven't been trying to be honest. I'd love to just zap off the weight around my midriff and upper arms but leave the weight on my face! I look younger and healthier with a little weight on my face. Oh what to do.... You can lose your waist, or lose your face!

    TaterTot, I agree, so many of the old stuff I can't stand now. I've never liked overly sweet foods, and now even diet coke tastes too sweet for me.

    Ed, we like the cauliflower and cheese, and excellent substitute for mac and cheese.

    Thankful, yes things have changed with how thy understand diabetes now and what a diabetic needs to do to take care of themselves. My mother in law is diabetic, and her granddaughter and daughter help take care of her, none of them know any of the new information available for the last 20 years. They still believe it is just sugar she should avoid. Last Friday the granddaughter actually told her her sugar was higher that evening because she hadn't eaten enough that day. I've seen some pitifully ignorant statements from her, and no cares my mother in law isn't being taken care of. The granddaughter actually told me a few months ago, I was young and had a lot of years left so it mattered if I took care of myself, my mother in law was old and set in her ways, and they didn't want to take away foods she liked. In effect she said, she's old and going to die soon anyway so what difference did it make.
    Good grief.

    Diane~you're face is gorgeous whether or not it's skinny or plump. ;)

    broEdEd, how do you buy your cauliflower/cheese? Is it a packaged deal like a frozen tv dinner? I've never cooked it before...have had it raw, but never boiled/steamed, etc. I can't wait to try your recipe.

    I love that Cabbage Dump & make it with Mexican Salsa & Mexican Velveeta. Today we bought a Juicer and many bags of carrots and apples. I saw a recipe for Cucumber Cooler, using apple, grapes & cuke.

    Granny, it is frozen Green Giant Cauliflower with three cheese sauce. Just put it in a sauce pan with a lid and let it cook about 8 minutes. You can eat it like that or add diced seasoned tomatoes. I vary the tomatoes.

    We tried some low carb pasta tonight and it tasted like cardboard. I think it was made with soy. We will not try that again.

    Our grocery store has been having specials on frozen food and especially the shrimp and veggies, so we have been eating a lot of that also.

    I've had that pasta, your right, cardboard, it isn't even worth eating. But I will say it depends on the brand, some are better then others. I have 3 brands right now, one isn't meant for human consumption I believe, one of the others made decent spaghetti that we put in stir fry.As much as I love mac and cheese, I can't stand that nasty pasta with cheese.

    Granny, I start with fresh cauliflower, cook it(boiled or steamed), and then make my own cheese sauce from scratch. I have used frozen cauliflower when I couldn't get the fresh on sale though. But I prefer fresh home made foods as often as possible, I think it is worth the extra effort.

    I use the fresh cauliflower, too. Tonight I had fried okra, just not breaded, but it can be breaded with the low carb baking mix. I have alos been getting some fresh shrimp up the road and boiling them. yum yum. I really dont like to cook, so I have had to get creative.

    Its under $3. So yes, its affordable, but its not really worth it to me. I tried to make yeast rolls out of it (YUCK!!) but it is good for battering things like okra and cheese sticks. Thats about it.

    There is a new "Low Carb Store" nearby, and the prices are really ridiculous. There was a thickening mix, kinda like cornstarch for $19. And a low carb pizza for $20. I nearly laughed out loud at it, but there were actually people buying that stuff!! All I got there was some taco shells - 1 carb each. There were 12 for $2. I am cheap. I try not to buy the "products" but eat natural things as much as possible, like fresh veggies and fruits, lean meats, and occasional nuts. Nuts are expensive!! I had some pecans in my freezer, but we already ate them all! Oh, and I do buy the low carb tortillas - I can make little pizzas, wraps, sweet crunchy little dessert thingies. They're great.
    Donna, what kinds of things do you eat? Is it pretty easy to stay with 150 carbs?

    I steam my own cauliflower when I can afford it, but the last time I bought a head, it was $1.79!!! I planted some in the garden...

    I am going to start buying the bags of frozen cauliflower, when it is on sale, because I use a lot of it in different recipes (faux potatoes-gravy etc.)

    I haven't tried the cauliflower and cheese, but I'm going to because macaroni and cheese is one dish I really miss!

    Donna: Could you post you recipe for CHEESE SAUCE on the "Diet Only Recipes" thread for me please?

    Tater: Can you buy low carb Taco shells anyplace besides a specialty shop? I haven't been able to find any and we love tacos and taco salad!

    I was wondering why anyone would prefer frozen? fresh veggies are more expensive than frozen.... :confused:

    btw, i've been enjoying reading everyone's entries. [​IMG]
    I've been losing weight recently. (my prenancy weight, and i gave birth seven months ago!!! :eek: :eek: :eek: )
    I've simply cut my rice, noodle (carbo) intake by roughly half. and i've visibly shrunk. :D And i still get to enjoy the sweets. [​IMG]

    TaterTot,, I don't really have a hard time on 150 carbs. I eat eggs and meats, fresh veggies as much as possible. I like the low carb tortillas, but they are $2.99 for 8, I eat maybe a pack a month. I buy low carb peanut butter, Carb Options which is Jiffy peanut butter, it is I think $2.69, but it lasts like a month and a half, low carb candy bars, catch them on sale at WalMart and buy a bunch, low carb ice cream, only 4 carbs a serving, and it's pretty good too. I eat a lot of salad when I can afford it, I love Caesar salad, celery with flavored cream cheese, only a few carbs. My afternoon snake is usually a few saltine crackers. I do eat a little potato and rice, but not much, sometimes as little as 1/4 cup. As long as I figure it into my daily carb intake I can do it. I actually drink milk! Sometimes it's hard, like a beautiful chocolate pie, but I can live without that and find recipes to replace it.
    I figure the bible says, whether you eat or drink or whatever you do do it to the glory of the Lord (can't remember reference), then He means what, when and how much food I eat can either glorify Him or not. God then added additional guidelines for me with diabetes. Extreme low carb deprives the body of needed fuel, and no one knows the long term effects, junk foods, well we all know they're just plain bad for you. God gives us the opportunity to glorify Him with what we eat, we can choose to do it or not.

    Su wei, just what I've been saying, minor carb cuts cause weight loss, and your the proof.

    Sue, I'll post it, but it contains flour, I figure I'm not going to drink a glass of it so it's not a lot of carbs, I've been meaning to try it with soy flour, it may work, I just don't make it all the time I have so many recipes for cauliflower and try to give my husband variety. So you might try it with soy flour and let us know if it turned out.

    OK i've given up the diet drinks. The aftertaste bothers me. They just aren't for me, So I will try to LIMIT my sugar intake ..

    I'm still working on the carbs :-S
