If a solely religious school determined to remain unaccredited, but its Board was made up of some reputable folks (eg: John Piper), would that outweigh its being unaccredited in your view?

Perhaps. It would depend on the rigor of the coursework and the reputation of the directors and their level of involvement and expertise.

It might make me think more highly of the school vis-a-vis other unaccredited schools.

If a school has a good faculty and has accreditation as a goal, I would consider it, especially if it was a school within the realm of my associations. Otherwise, how could anyone ever start a new school?

The faculty would mean a lot more to me than the board. In days past in many cultures education meant who you studied under more than it meant where you studied. Remember Paul? "I studied at the feet of Gamaliel."
