What Did paul mean By "Sinful nature?"

I am not sure what verses you are referring to. Is this it?
Col 2:13 And you, being dead in your sins and the uncircumcision of your flesh, hath he quickened together with him, having forgiven you all trespasses;
Paul says that we were dead in our own sins here. I don't see any mention of being dead in Adam, do you?
In fact, the Bible NEVER says we are dead in Adam. There is only one time in all of scripture that the Bible says "in Adam"
1 Cor 15:22 For as in Adam all die, even so in Christ shall all be made alive.
This is the only time the term "in Adam" is ever used in the Bible, check and see for yourself. This verse does not say we are dead in Adam, it says "in Adam all DIE".
This is not speaking of spiritual death and being unable to be willing to respond to God. This entire chapter is speaking of the resurrection of our physical bodies. So, "in Adam all die" is speaking of physical death only. -
Considering their first-hand knowledge of God,
even so, Cain slew his own brother and then
replied to God "Am I my brother's keeper?" when
Cain was asked by God "Where is Abel thy brother?"
knowing that Abel was dead at the hand of his own brother.
As Paul said in Romans 1:21

i.e for myself - winman, I hear you though I still disagree because of the grammar (Grk) of Romans 5:12.
I think we can all agree that our condition is directly related to the fact that we are all children of the first human sinners (Adam and Eve).
The details of that relationship is our area of disagreement.
We can all agree with this scripture:
Romans 3:23 For all have sinned, and come short of the glory of God;

The emboldened text above is the key phrase to the sin nature theory "and the uncircumcision of your flesh" (though I believe it to be fact).
We come into this world uncircumsized.
