The most important persons in 2nd century church history, may very well have been a couple of non-christians.
Simon bar Kochba (or bar Kosiba depending on your taste) and Hadrianus (the roman emperor who made the beard fashionable again).
Simon's rebellion ended up completing the proces that made Judaïsm and Christianity 2 different religions for one thing.

You could add Marcion to the list. He was a heretic, but his false teachings were influential and moved Christians to more closely examine matters like inspiration and canonicity.
As for the poll, I voted for Irenaeus, although a good case could be made for Origen.
