What do you do on Wednesday or any mid-week service?
What are your goals for that service?

Good question Tom.
Wednesday night service for us is a prayer meeting. We usually spend some devotional time (not deep exegetical, theological study) in the Word for the first little bit, answer any questions there and then turn our focus upon prayer. We usually have a prayer list already printed up so we don't spend the majority of the time taking prayer request. We go swiftly over our concerns, ask if there's any more, and then spend the remaining time allowing one another to pray. My main objective, other than the edification of bible study and fellowship is to help others cultivate a better devotion and prayer life. By seeing and hearing one another pray, my prayer is we all come to draw closer to the Lord in our personal walk with Him.

We generally have what our church calls a "prayer meeting." It consists of singing a couple of hymns, a devotion, and prayer time (although the majority of those who come would rather just have a full sermon and little prayer).
Our prayers seem to center mainly on sick folks. I heard someone say, "We are spending more time, energy and effort praying to keep Christians out of heaven than we are praying to keep the lost out of hell." I am becoming more and more convinced that this is a very true statement.
I am still praying that we would have a genuine, Holy Spirit empowered prayer service! -
I'm not a pastor but I'm married to one and since I'm one flesh with him, may I answer here? ;)
Wednesday night we have "Family Night". It used to be, when we were smaller, nursery for the littles, Pioneer Girls and Boy's Brigade for the kids, youth group for jr. and sr. high and then classes for the adults. Now we've changed things a bit and we've dropped the Pioneer Girls and Boy's Brigade for KidStuf, which is a program for kids done at Andy Stanley's church. But it's all still for the whole family to come out. We don't have a mid-week or Sunday night services - just the two on Sunday morning. -
Ours is a Bible Study night..
We meet in the fellowship hall around tables and I teach on various topics.. for the last 3 weeks the topic has been "worship", the proper way to worship, and when and where it is appropriate.. I develop a Powerpoint lesson, and then we jump in discussion style...
I include the youth.. for they bring an element to the table that the older ones like me need to hear!
Imagine Baptistboard gone "LIVE".. .that is what it is like.
Then of course I mentioned "fellowship".. so for Baptists that means food..
So someone brings snacks each week.. and voila! FELLOWSHIP! -
I have found that a prayer list with several different areas for prayer helps eliminate becoming too narrowly focused on one particular need - such as physical needs (though those are included!). We include categories such as,
Salvation
Missions
Spiritual Growth
Physical Needs
Friends & Family
Our Church
Our Leaders
... and so on

Tiny Tim - we do something like that on Sunday nights and we love it!
SBCPreacher - I agree that the sick get more att'n than than the unsaved in our prayers times. We use a prayer list with many of the same divisions as Pastor David, but even that doesn't help most times. So there are some prayer meetings where we just ask people to pray for their unsaved friends.
Pastor David - Some good ideas.
We take prayer requests and then pray. Most times we have 20 minutes left of the hour and then I will do a Bible study. Right now we are going chronologically through the life of Christ. -
We call Wed night service 'HOUR OF POWER"
I do have a short Bible Study preceding our prayer time. -

We meet on Thursday evening, sometimes at church but more often in someone's home for an hour of silent and spoken prayer.
