Sounds delish Donna, and congrats on being able to cook a real meal again!

Tonight is corned beef, cabbage, and taters. The beef is ready, the kids are prepping the taters.

the melon sounds really good. What kinds of melon do you use? Is that all there is to it, 3 kinds of melons and orange juice? Might need to make that this summer.

Tonight is stand up roasted chicekn, chicken and garlic rice, and honey glazed carrots.

Stand up chicken= ever heard of beer can chicken? I've done that on the grill several times, no beer, sometimes an empty can, sometimes some liquids in the can (don't recall what though). I have a wire stand for the can to keep the chciken from falling over also, so really no can even needed. But I saw on foodnetwork once they used a bunt pan, put the chciken on it and grilled it. So I bought one at a yard sale for 25 cents, and it works great, the grease collects in the pan and doesn't make your grill falre up. So I am going to try this in the oven, cover the center hole with foil. You rub spices all over, and it browns and gets crispy all over the skin, not just parts, yet moist and tender inside. Worth an attemp in the oven.

I cut up watermelon, rockmelon(canteloupe) and honeydew into cubes or use a melonballer. and add a little orange juice to stop it drying out. I prefer to use seedless watermelon or otherwise you flick out the seeds as you go. It is colourful and healthy as desserts go.....:wavey:
