Oh, Katie! Thanks for all your hard work compiling this list! You can add my Pumpkin Bread recipe, too, and blackbird's secret pie (remember how hard it was to get that?? LOL!) :D
Now, if blackbird would just deliver that Cajun Gumbo recipe he was bragging about down there on the chili thread...... (maybe it wasn't a REAL recipe? ;) let's see if he goes for this bait! LOL! )

EASY LASAGNA--MICROWAVE ONLY
1 lb. hamburger
1 qt. spaghetti sauce (I use generic)
1/2 c. water
1 1/2 c. ricotta or cottage cheese
1 egg
1/2 tsp. pepper
8 lasagna noodles (uncooked)
8 oz. Mozzarella cheese (grated or sliced)
1/2 c. Parmesan cheese
In large glass bowl, crumble hamburger. Heat on high 2 or 3 minutes or until hamburger is done. Stir once or twice. Drain. (I cook mine in a colander placed inside another bowl-it drains while it cooks)
Add sauce and water to hamburger.
Meanwhile, combine cottage cheese, egg and pepper.
In oblong baking dish (I put mine in two 9x9 dishes) spoon 1/2 c. sauce; alternately layer noodles, egg mixture, mozzarella cheese, and sauce, forming two layers.
Heat, covered with plastic wrap on high 8 minutes, then on medium low 30-32 minutes until noodles are tender.
To complete: Top with Parmesan cheese; let stand, covered, 15 minutes.
Makes six servings.

RANCHERO CASSEROLE
I love this one; everything goes in raw and it can be made 2-3 days ahead of time when you have a few minutes and saved for when you need a quick meal. Just pop it in the oven, add salad and you are ready to go!
1 1/2 lb. hamburger
1 tsp. garlic salt
1/2 tsp. salt
1 lg. onion (chopped)
1 gr. pepper (chopped)
1 tsp. chilli powder
1 c. min. rice (uncooked)
1 #2 can tomatoes
1 can kidney beans
Mix together well. (I add kidney beans last so they don't get all squished)
Place in baking dish. (9x9)
Bake at 350 for 1 hour.

That's a great recipe, Sue. It seems to me you could add some frozen vegetables or leftover vegetables as well and even top it with cheese? I am always looking for ways to include the six peas leftover that someone carefully stored in a large container in the fridge... :D
-
It does sound good, and cheap. Thanks for sharing with us.
Helen, 6 peas? Boy you guys save more leftovers then I do. -
I will see if I have a recipe that calls for 6 peas. What I usually do is save all the veggies by freezing them. When I have enough, I make veggie soup or stew; sometimes even hash or a pot pie, or just creamed veggies.
I've heard it said that you are what you eat...if that's the case then I am fast, cheap and easy !
