    GERMAN CHOCOLATE PIE

    4 oz German chocolate
    ¼ cup butter
    1½ cups sugar (or substitute)
    3 TBLS cornstarch
    1/8 tsp salt
    1 tsp vanilla
    2 eggs - beaten
    1½ cups evaporated milk
    1 unbaked 10-inch pie crust

    TOPPING
    1 1/3 cups shredded coconut
    1/2 cups pecans - chopped

    Preheat oven to 375º. In microwave, melt chocolate and butter on a low setting in a medium-size bowl. Stir several times during melting process to prevent burning.

    When chocolate is melted, stir in sugar, salt, vanilla, cornstarch, and eggs until well blended.

    Stir in evaporated milk until smooth. Pour into pie shell. Mix coconut and pecans together. Sprinkle them evenly over the chocolate mixture.

    Use a knife to cut through the coconut into the chocolate mixture in several places. Bake 45-50 minutes or until center is set.

    *TIPS*

    The pie center puffs slightly and the top begins to crack when it is done. If the crust becomes to brown, place a piece of foil over the top of the entire pie for the final 15 minutes of baking.

    A dollup of whipped cream can be added if desired.

    Pumpkin Chili Mexicana
    Estimated Times:
    Preparation - 10 min | Cooking - 40 min | Yields - 6 servings

    Pumpkin lends color and nutrients to this creamy Chili Mexicana. Onion, chile peppers, ground turkey and kidney beans seasoned with cumin and chili powder make a zesty and flavorful dish.

    Ingredients:

    2 tablespoons vegetable oil
    1/2 cup chopped onion
    1 cup chopped red bell pepper
    1 clove garlic, finely chopped
    1 lb. ground turkey
    2 cans (14.5 oz each) diced tomatoes, undrained
    1 can (15 oz.) LIBBY'S 100% Pure Pumpkin
    1 can (15 oz.) tomato sauce
    1 can (15.25 oz.) kidney beans, drained
    1 can (4 oz.) ORTEGA Diced Green Chiles
    1/2 cup whole kernel corn
    1 tablespoon chili powder
    1 teaspoon ground cumin
    1 teaspoon salt
    1/2 teaspoon ground black pepper

    Directions:
    HEAT vegetable oil in large saucepan over medium-high heat. Add onion, bell pepper and garlic; cook, stirring frequently, for 5 to 7 minutes or until tender. Add turkey; cook until browned. Drain.

    ADD tomatoes with juice, pumpkin, tomato sauce, beans, chiles, corn, chili powder, cumin, salt and pepper. Bring to a boil. Reduce heat to low. Cover; cook, stirring occasionally, for 30 minutes.

    Made the chili Monday. It is good, but it needs more spice. Also, I think less pumpkin would be ok, too. (Or just more of everything else!)
    When I heat up the leftovers, I'll definitely add more chili powder, some paprika and maybe a smidge of cayenne.

    I'd recommend to try it.

    I do something totally differetn now in teh effort to find the best ribs I can make at home with what I have avaliable. So far they've been good. But we still prefer the crockpot.

    I don't think you can beat "Katie's Ribs" Donna, but you said you were looking for something different. I just found this on the net tonight.

    CHINESE SPARERIBS

    4 lb. Spareribs (or any kind of meat)
    2 Tbsp. Vinegar
    Water
    3/4 cup Soy Sauce
    3/4 cup Brown Sugar
    1 small can crushed pineapple, juice
    1 Tbsp. Dry Mustard
    1/2 tsp. MSG

    Bring to boil spareribs in vinegar and enough water to come 1 inch below ribs. Simmer 1/2 hour. Drain and place in shallow pan.

    Mix together other ingredients and pour over ribs. Bake in oven at 375 degrees for 1 hour, turning often. Be careful to keep ribs coated with sauce.

    Serves 4.

    We have NEVER had ribs at even expensive restaurants that can compare with 'Katie's Ribs'. For those who don't know... it's Donna's recipe! Hubby and all love them!

    Sue, I will certainly use that recipe, I love chinesse ribs. And I'm glad I can use any kind of meat.
    Well, I'm glad those ribs are still popular. I love ribs, always have, been a favorite since I was a kid. Rob doesn't care much for them, but he likes how tender these are.

    Well, I do mine the lazy way...boil 'em till tender, drain well, put in pan, pour on bbq sauce (I make a Jamaican sauce) & heat thoroughly in oven.

    I used to do the samething granny(learned from mom, she has always boiled ribs), until we had to travel all day Saturdays to visit lt. Robert, and I'd cook in the crockpot, basically it's still the samething except you don't use water and loose less flavor by not having the water, and they get even more tender then I've ever had boiled. Then I just lay them out on the baking sheet and cover them with sauce and bake till it bakes on. I hate bbqed anything that has runny sauce.

    Cheesy Green Bean Casserole

    1 stick butter
    1 chopped onion
    ¼ cup flour
    1½ cup milk
    3 cups grated cheese
    3 (14.5oz)green beans, drained
    4 oz. sliced mushrooms
    1 (8oz) sliced water chestnuts, drained
    2 tsp soy sauce
    dash hot sauce

    Sauté onion in butter, stir in flour, smooth, add milk & cheese making sauce; then add rest of the ingredients. Bake in 350º oven, 30 minutes.

    (Made this tonight and it is delicious! It serves 8, so we will have enough for tomorrow night too...)

    HAM & CHEESE CASSEROLE

    1 stick oleo or butter
    ½ cup flour
    2 tsp salt (less if ham is salty)
    ¼ tsp pepper
    3 cups milk
    5 cups potatoes - peeled and sliced thin
    3 cups shredded cheddar cheese
    4 cups ham - chopped
    1 onion - chopped
    1 green bell pepper - chopped

    Mix flour, pepper, and salt. Melt butter in saucepan. Add flour mixture and cook over medium heat for one minute, stirring constantly. Remove from heat and stir in milk. Return to heat and cook until thick. (white sauce)

    Mix remaining 5 ingredients with sauce.

    Bake in a covered dish at 350º for 90 minutes.

    Remove cover after first 30 minutes.

    Serves 8
